Since I keep posting about the health benefits of vegetables, I thought I would write about cooking them. Lightly steaming them is the healthiest way to cook them, but almost as good and much more versatile is stir frying. If you are cooking for three or fewer people, it is also fast and easy. You can buy a few premade sauces and have several different styles of food with one style of cooking. First chop the veggies you want to cook into small, bite size pieces, and finely chop some garlic, onion and/or ginger. I prefer cooking with a wok, but a skillet will do. Heat a little oil in the pan and fry the garlic, onions and ginger for a minute or so. Add the veggies and continue to stir fry on fairly high heat. If you have quick cooking veggies, after about three minutes you can throw in your sauce, stir it up and you’re done. For longer cooking veggies, add a bit of water after frying them for a couple of minutes, put a lid on and steam for about five minutes. Then add your sauce.
For variety, I like to keep the following sauces on hand:
Chinese oyster sauce, hoisin sauce, black bean paste, soy sauce.
Indian curry powder, Thai curry paste, Asian Chili sauce.
Mexican chili powder, tomato sauce, and European herbs.
